About the Role
We are currently recruiting a Chef de Partie for a new opening of a luxury restaurant in the heart of Milan.
We are looking for a professional Chef de Partie to amaze our high target guests with excellent cooking, according to the Executive Chef’s recipes and specifications. Your work will be an important factor to pursue and maintain our luxury standard cooking level. As a Chef De Partie you are responsible for supporting the Executive Chef and his team in preparing consistently high cuisine, handle purchase orders and ensure items’ top quality.
Prepare menus in collaboration with cooking staff;
Ensure adequacy of supplies at the cooking stations;
Prepare ingredients that should be frequently available;
Follow the guidance of the Executive Chef and have input in new ways of presentation or dishes;
Put effort in optimizing the cooking process with attention to speed and quality;
Responsible to supervise commis de partie;
Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met;
Enforce strict health and hygiene standards;
Knowledge of HACCP guidelines;
Help to maintain a climate of smooth and friendly cooperation.
Proven experience in a Chef de Partie role;
Excellent use of various cooking methods, ingredients, equipment and processes;
Ability to multitask and work efficiently under pressure;
Knowledge of best cooking practices;
Culinary school diploma;
3 years’ previous experience in the role.
